Pomegranate Champagne Brunch Cocktail

You don’t need an excuse to drink in the morning. For real, I’m not judging you - just go for it because Brunch is a legit drinking time of day. Morning cocktails generally are a little lighter and a little lower in alcohol content so you aren’t asleep again by noon. A lot of times they’re as simple as fruit juice and champagne and while that is the core of this drink, I tend to enjoy something a little more complex.

Remember when I taught you about making your own grenadine a few weeks back in my Syrups post? We’re going to use that here because we’re too fancy for that red corn syrup they call grenadine in the grocery store.


  • 1/2 part homemade pomegranate grenadine syrup
  • 1.5 parts St. Germain Elderflower Liqueur
  • Brut champagne, chilled


Pour your grenadine syrup into the bottom of a champagne or coupe glass. Over this you will pour your St. Germain. Top with the chilled champagne to taste. Seriously, how easy was that? I'm useless in the morning so simplicity is key. I was going to say you could rim your glass with sugar but you really don't need to, the drink is very sweet to begin with. Enjoy!
